Easy Muffins
holy shit i am loving this!
convert flour into food!
Scratch Muffins!
prep time 5-15m
cook time 20m-30m
makes: 12 muffins
this is modified from a formula posted by @ann_leckie, this post right HERE !
I encourage you to read it for an even more stripped down set of instructions/muffin blueprints
INGREDIENTS:
1.5 cups flour
1.5 cups oats
1 cup milk
1 egg
1/4 cup oil [butter or cooking oil]
3/4 cup sugar
3 tbsp brown sugar
2 tsp baking powder
1/2 tsp vanilla extract
optional: some raw granulated cane sugar to spread on top
TOOLS NEEDED:
1 Muffin Tray
12 cupcake wrappers
2 Mixing Bowls
1 Hand Whisk
1 Small Ladle
INSTRUCTIONS:
preheat oven to 400
gather tools/ingredients
MIX DRY
1. combine dry ingredients in large bowl [flour, oats, baking powder ]
1b. blend dry ingredients with whisk
note: CAREFUL, SUGAR IS A WET INGREDIENT
MIX WET
2. combine wet ingredients in a second bowl [sugar(s), oil, egg, milk, vanilla]
2b. whisk wet ingredients
COMBINE WET => DRY
3. add wet ingredients into dry as you mix
3b. evenly mix together with whisk
ADD EXTRAS
* add extra bullshit here
like berries /chocolate/etc
POUR INTO TRAY
4. put cupcake paper cups into your muffin tray
4b. scoop or pour mix into cups! i like to use luttle ladles since the amount distributed is almost perfect. you'll get the hang of how much to put in each after a batch or two
OVEN FOR 20MIN
5. put in oven for 20minutes
*5b. after 3 or 4 minutes, (once the tops have firmed up a little bit) sprinkle some raw sugar granules on the tops of the muffins.
careful about not spilling it inside your stove
ROTATE
6. halfway thru, rotate the muffin tray
6b. after timer is up, do the toothpick test and take them out of the oven!
LET SIT 10MIN
7. let them sit in the tray for 10 minutes afterward to cool
yay you made muffins from scratch you maniac! while the first batch cools you can totally do another batch and when youre done you'll have a stupid amount of muffins
these arent like ... mindblowing muffins, im sure some of you might have ideas for improvements, but its a great barebones start! make it yours and experiment
